I have been running an overall liquor cost in the low 20s (between 19% and 24%)...However my beer cost is usually in the low to mid 30s (b/t 30%-35%) and the liquor (which is the biggest expense thankfully) runs b/t 17%-20%) each week.
My question is: is this normal? Do any of you out there have a high beer percentage, and a low liquor or vice versa? Is that a high beer percentage too? Should I be running a lower % on beer? I've asked a major chain restaurant here (TGIFridays) and the bar manager said that's pretty low and they run in the high 20s.
