Thanks in advance - would appreciate all informed responses...

What is the average profit margin after expenses? I have heard gross margin is around 75 - 80% but what is the earnings after operating costs?

Secondly, what is the multiple or payback typically for a bar/club? I have heard in restaurants it is 1.0 - 1.5x or just under 2.0 years. Any different?

Thirdly, (I'm new to this), how do you decipher what the true earnings are from the two sets of books kept? I know they understate sales and overstate expenses, how do you figure a true number to decide what the offer price should be?
