What are some ways to find if there is any smaller vegas-like conventions going on, where you could meet local club/bar managers/owners/bartenders? I'm new to the industry and looking for ideas...?

Contact your local Tavern Owners Association. They usually meet once a month and have a trade show once a year.

To find out who they are, contact a local bar and ask the owner.

Another area you may venture into is the Restaurant groups, I am not familiar, but a trade show organization used to contact me all the time to do theirs, it was mainly food establishments - with a lot of bar owners attending as well. The best by far is the one in Vegas put on by NCB - it caters directly to the owners. It's the best!
