I am great, great grandson of John McSorely (Manhattan Ale House) and am creating a business plan for a tavern in the Los Angeles Metro Area. I am now at the fun part - projecting the operating statistics for the Business Plan. How do I find the numbers?

Any help or direction would be greatly appreciated!
