View Full Version : Buying new Bar and have a question

I am in the process of purchasing a local bar which is generating about 14K gross a month. Rent is only $1000. It's netting aprox 50K yearly. It's a bar that I frequented so I know the clientel and staff fairly well. I have on several occasions been undercharged for my drinks when paying my tab. To keep this from happening I'm thinking of installing a POS and a security system to monitor the bar. These are a little pricy. Currently they just write down what the customers are buying on slips of paper scattered near the cash register. Do you think these devices will help, or do you have any other recomendations. Thanks.

If the staff is doing it with the current owner then they most likely will do it with you as the owner too.....If you dont replace the staff (which might hurt business if it is a small hometown bar that the patrons have been going to for many years) then make it well known that you noticed this prior to your purchase of the establishment and you will not tolerate it. Install a fake camera bubble if you cannot afford a real system....(until you can afford a real one) a pour system is hard but not impossible to beat...in my humble opinion nothing beats nightly inventory counts....you can identify which bartenders are over pouring, under charging or plain out stealing make it known to your staff that you are doing this by doing it while they are still there....do that until you weed out the bad eggs and then move to weekly inventories. If you notice your numbers slipping later on go back to daily inventory until you catch the culprit again...

ANY system is defeatable. Replace the staff and train them to do it right.

new help but also go ahead and start your inventory process because the new help will start with these nasty habits shortly. I installed cameras but its quicker to do inventory than watch tape. Once you get the system down it doesnt take anytime 15-20 minutes
