information on starting up a club

i am in the process of starting up a high end lounge. however, i am not sure on serveral things
-how many employees i should hire for a 2-bar club?
-if i have full time employees do they recieve benefits and who plays for it?
-how much on average should bartenders, waitress, barbacks, security, and dj get paid
-what software should i use and the cost of it for inventory check and cashier check

if anyone can help me with those information that would be great thank you
